This recipe makes a great after-school or after-work snack or a fast dessert for a family dinner.
1 T. ricotta cheese
1 T. applesauce (pureed), peaches or drained crushed pineapple
2 t. sugar
Sprinkle of cinnamon
One 3-inch sugar cookie (store-bought)
- Blend cheese, fruit, sugar, and cinnamon.
- Spoon over sugar cookie (turned upside down so sugar side is on the bottom next to cookie sheet or foil).
- Bake at 350 degrees for 15 minutes (cookie softens as it absorbs liquid from fruit-cheese mixture).
- For a softer treat, lower oven to 325 degrees.
