A healthful variation of a favorite rice dish.
1 C. onions, chopped
1/4 C. sweet green peppers
2 t. vegetable oil
1 C. tomato sauce
1 t. parsley, chopped
1/4 t. black pepper
1 1/4 t. garlic, minced
5 C. white rice, cooked in unsalted water
3 1/2 C. chicken breast, cooked (skin and bone removed), diced
- In large skillet sauté onions and green peppers in oil for 5 minutes on medium heat.
- Add tomato sauce and spices. Heat through.
- Add cooked rice and chicken and heat through.
