Sweet Potato |
This holiday favorite is healthful enough for everyday fare.
3 C. cooked, mashed sweet potatoes
3/4 C. sugar
1/2 C. liquid egg substitute
1/4 C. light margarine (use stick variety, such as Promise Light; these work better in baking than tub variety)
1 T. vanilla
3/4 C. packed brown sugar
1/2 C. chopped pecans
1/3 C. flour
1/3 C. light margarine (stick variety)
- Mix cooked sweet potatoes, sugar, egg substitute, 1/4 C. margaine and vanilla. Pour into casserole dish.
- Mix brown sugar, chopped pecans, flour and 1/3 C. margarine. Sprinkle mixture on top of sweet potato mixture.
- Bake at 350 degrees for 35 minutes.
